With a line of vegetable ash running horizontally through the center of its paste, Morbier is one of the most aesthetically-striking cheeses in our collection. Originally used to separate evening milk from morning milk, the ash was used because fire was the only known way to sterilize, and covering the cheese with sterile ash would protect it from insects and other pests. While the production manner has changed in the last couple of centuries, the ash remains as homage to the cheese's past. But Morbier is about more than the visual effect. Beefy, pungent and bearing a strong aroma, it holds its own against other powerful flavors. Melt it over potatoes, drink it with a Belgian Double Ale, Cote du Rhone or Pinots, or top a French Onion Soup.
