Traditionally made from the raw milk of Salers cows, Saint Nectaire has been produced in Auvergne for several centuries. Currently available in the U.S. in its pasteurized form, the milk comes from herds that graze on wild herbs in mountain pastures. The cheeses are aged from 3-8 weeks, during which they are washed several times with fresh mountain spring water. The 3 pound wheel has a tough gray rind and is covered with various molds. The paste is straw yellow, soft and supple with earthy, mushroom flavors. The finish is tangy and clean. Pair with Sancerre or Cotes du Rhone.
