There is a strict presidium on Artisan Somerset Cheddar, a set of guidelines that dictate what a cheesemaker must do to ensure that this Cheddar is as authentic and delicious as possible. Isle of Mull meets all of these guidelines, except for the fact that it is not made in Somerset. Produced in the picturesque Hebrides, Isle of Mull Cheddar is made by hand, with raw milk, and wrapped in cloth, as tradition mandates.
But our favorite fact about this stunning cheese is that it is made from the milk of cattle that have fed on the spent grain of a local Scotch distillery. This unique feed is apparent in the finish, where sweeter fermentation notes come through the otherwise earthy, grassy flavors. This is one of a small percentage of cheeses that works brilliantly with Scotch.
