Petit Basque also known as P'tit Basque was first introduced in 1997 by French dairy giant Lactalis. Petit Basque is made with pasteurized sheep's milk and is aged for 70 days. The three inch tall wheels have a soft, moist texture that is part of their appeal. The paste is butter colored and smooth, with no eyes, and with brown butter and caramel aromas reminiscent of creme brulee. The cheese is creamy on the tongue, and as it melts, sweet and salty flavors emerge. Subtle with low-key sheepiness, Petit Basque's creaminess gives way to toasted nut, garlic and vanilla.
