Reminiscent of French Gruyere-style cheeses, Pleasant Ridge Reserve is one of the standard bearers of the American Artisan Cheese movement. Pleasant Ridge Reserve has been produced in Dodgeville, Wisconsin since 1994 and in its short time it has been awarded two Best-in-Show awards by the ACS. Pleasant Ridge Reserve is made only during the summer months from raw milk, while the cows are grazing on fresh pastures. It comes in a ten pound wheel and is aged roughly 18 months. The flavor is complex, buttery and smooth with a hint of apricot. It pairs well with kirsch, cherry and rye manhattans, chocolate and butternut squash preserves.
