A Cow's milk cheese from Switzerland traditionally made by Abbey monks. It has a meaty, nutty flavor reminiscent of Swiss Gruyere though at two pounds a wheel approximately 1/50th the size. Tete de Moine has a slight herbal flavor to it that allows it to pair well with alpine charcuterie such as Speck Alto Aldige. The cheese is best enjoyed cut in fresh rosettes,usually by a specially designed tool called a girolle.
