Castella began its roots in a production warehouse facility in Hicksville, New York. Since then, Castella has grown into a major importing, manufacturing and distribution center. They are now one of the largest importers of specialty foods in the United States, distributing their products from around the world. In a relatively short period of time, through an ongoing commitment to customer satisfaction, the Castella brand name has become "The Recognized Mark of Quality" in the gourmet food industry.
85% of all of the cultivated crops of capers come from two countries, Turkey and Morocco. Capers are the floral bud of a thorny plant called "Capparis Spinosa". This is the largest size caper that Castella carries. They are packed in vinegar brine and contain no preservatives. Capers are the essential ingredient in veal picatta, as well as putanesca and tartare sauces. They can be added to dips and salads and can lend piquancy to many sauces and condiments. They can also be used as a garnish for meat and vegetable dishes, and are traditionally served with smoked salmon as well.
