How We do It

How do we pack your perishables/dry goods?
All of our perishables are packed in thick walled foam chests and packed with harmless re-usable ice. If you should also order dry goods, we neatly pack them around the ice chest, enclosed in a sturdy corrugated container. Note: In winter months, we may not cold-pack some of our aged/cured cheeses and meats.

How do we cut your meats and cheeses?
Unlike most companies, all meats and cheeses are freshly hand-cut the day your order is to be shipped. All cheeses are cut from an authentic wheel with the actual weight reflected on your invoice. If you should order more than one pound of cheese you will receive a hand-cut wedge of cheese at or near your desired weight. All slicing meats are sliced (same-day) on a professional slicer.

When do we ship your perishables?
We normally ship most of our perishables via 2-Day service on Monday, Tuesday, and Wednesday, for delivery on Wednesday, Thursday, and Friday respectively.
