This Red Wine Cured Bacon is the chef’s favorite, inspired by pancetta teas, which is Italian red wine cured pancetta. However, this creative chef adds some extra care and steps to the process to make this bacon truly superior. He cures the pork belly in red wine and spices and hangs it to mature. Then, he smokes it in an old fashioned smoker for 8-12 hours, over a combination of oak and olive wood. The flavor is rich and intense.
