Lomo is made from (and translates as) pork loin, so it is a relatively lean cut of meat, though it is by no means lacking in flavor. It has a nutty essence with a bit of spiciness from the Spanish paprika that the lomo is cured in. Lomo pairs up wonderfully with other Spanish classics like young Manchego as well as more assertive partners such as a strong Spanish blue and truffle honey.
