Prosciutto di Parma will melt in your mouth. Its one-of-a-kind flavor and silky-smooth texture is a result of extensive curing and a time-tested recipe. The hams undergo a series of curing periods, after which, they are stamped with the month and year of processing and lightly coated with sea salt to rid them of impurities. They are hung, re-salted, and then hung again for several months in large curing rooms whose windows are left open to allow the cool mountain breezes to circulate around the hams. Experts believe that it is this air, indigenous only to the hills of Parma, that account for its unsurpassed sweet flavor!
