A raw cow's milk cheese from Lombardy, Ubriaco del Piave is immersed in a young Chianti when it is young. This gives the otherwise sharp cheese an almost candy-sweet flavor as well as its name, which means drunk, in Italian! The cheese has a dense, creamy texture with a slight grain to it. Ubriaco has hints of dark chocolate and a slight spiciness, which add to its complex flavor. We recommend this cheese be enjoyed simply, because with this much flavor in one cheese, adding anything else would be unnecessary.
