The Buffalo Wing Cheese Plate. Yeah… that’s right.

by: Janeane Tolomeo

This is the result of what happens when you love buffalo wings, and you love cheese plates.

Meet:  The cheese plate that tastes like an order of buffalo wings – only better.Stop Right There. And Eat This.

THE GOODS

IMG_5229psHere’s a peek at what you’ll need to make this magic – feel free to sub and swap as you please, as long as you stick to one spicy meat and some blue/gorgonzola, it’ll work.

Drool over each piece of the plate or jump to the bottom to witness the perfect ‘buffalo wing’ blue cheese bite.

Hunger-inducing food montage coming at you..!

THE BLUE CHEESE / GORGONZOLA CHEESE

Much has been said about this guy.  Colson Basset Stilton… a fudgy salty blue that melts in your mouth is among the finest blue cheeses in the world.

So eat a hunk alone and savor it until the end, throw back a piece and try a bite of something else just before the Stilton washes away, or just pair it up with one of everything on the plate and go to town.

 SMOKING GOOSE DELAWARE FIREBALL SALAME

IMG_5264psSmoking Goose Delaware Fireball Salame.  To be honest this meat alone would settle your buffalo wing fix (but why would we stop there right?), with crushed chili, espelette pepper, and garlic – wrapped and smoked over hickory wood.  Definitely a conversation starter.

ANN’S HUNGARIAN HOT PEPPER MUSTARD

Next up, Ann and her Hungarian Hot Pepper Mustard. Hot and sweet yellow peppers fresh from her farm with spices and red peppers – it has a sweet and tangy taste, with a hint of spice. You can put this on just about anything and just about anytime.

THE EXTRAS – BROOKLYN BRINE CHIPOTLE CARROTS

IMG_5259 Pickled, but not too tangy, these Chipotle Carrots play up the buffalo wing vibe while upping the snacking ante. Throw together an interesting bite with a crostini, half a carrot slice, and a small hunk of Stilton. The combo gives your mouth something to think about, first getting the flavor from the Chipotle Carrots, then the Stilton, and ending somewhere in the middle.

Use the leftovers as a base for soups, a coleslaw kick-starter, or as a side for your next BBQ plate. Organic and hand jarred, these will go a long way and are a guiltless WOW.

THE EXTRAS – MAILLE CORNICHONS/GHERKINS

So many tiny cucumbers – pickled in vinegar with tarragon, cloves, baby onions, and mustard seeds.  Throw these on one of our hot pepper crostinis with Ann’s Hungarian mustard and you’ll find yourself eating a few more than you originally intended.  Any line of these will do!

AND FINALLY,

THE BITE THAT YOU’VE BEEN WAITING FOR.

THE STILTON/FIREBALL/HUNGARIAN MUSTARD ‘WING’

As your chewing, you’re thinking WOW, you’re saying WOW, then you’re thinking it again, and so on.  This is a no joke combination… for which, everyone will love you and think you’re a genius.
