The customers have spoken! Carles Roquefort was named the winner of our 2nd Annual March Madness tournament pitting cheese against cheese. Roquefort has one of the most complex and robust blue flavors that sets it apart from all other blues. It is soft yet crumbly, with a spicy, sea-salty flavor. This cheese is one of the great A.O.C. controlled cheeses since 1925, and, widely heralded as the King of French cheeses. Ripened in caves, Roquefort's (roke-FORE) marbled blue veins are induced by fleurines, currents of air let into the cave to assist the mold development process. This mold carries its own fame and is now recognized as Penicillium Roqueforti. The wheels without rind are foil-wrapped and stand 4 inches high and 8 inches in diameter. The greenish- blue veining characteristics make Roquefort easily recognizable. Also look for the red sheep seal on the foil indicating its true A.O.C. status.
It makes an exceptional wine and cheese pairing with Sauternes. Jaques Carles, the maker of this gem, is a 94-old-man who works with a small contingent of family and friends. The production of his Roquefort is the second smallest of the 8 licensed producers, and the smallest of those exported to the United States. All who have tasted it agree that it is superior to the big names of Papillon and Societe.
