Comte is a firm pressed cheese produced in the Jura mountains of France. Comte is made in cooperatives that gather milk from the small farms of the surrounding area. It displays tremendous seasonal variation, having a nutty, almost toasty flavor when made from fall and winter milking, and a brighter, tangier, fruity quality when made from spring and summer milking. Comte pairs beautifully with a wide variety of wines from the Jura as well as a fruity Belgian Lambic beer. It can also be used to add a distinct quality to your next fondue.
