Fiore Sardo's history stretches back into the Bronze Age and is the best surviving example of ancient Roman cheese making. Cheese, it is believed, was discovered in the Middle East over 5 thousand years ago. The Romans with their characteristic efficiency were quick to develop cheese making into a fine art. The Romans were the first to develop smoking and aging methods. In the case of Fiore Sardo, we have a cheese that is briefly cured before it is smoked and then set to age for 3 - 8 months. The rind is natural, golden-yellow to dark brown and has a sour, damp smell. The cheese is hard and grainy and has a wonderfully rich flavor, with caramel sweetness, salty tang and a hint of fruit. Fiore Sardo is lightly smoked over balsa wood, which is low in tannins or natural oils and does not overpower the cheese but rather serves to accentuate the tanginess of the ewe's milk.
