At first glance, Verde di Capra displays a stark contrast of bright white paste against blue veins running vertically through the cheese. It is a fairly new player in the blue cheese game, cheesemaker Ambrogio Arnoldi, created it less than 10 years ago. His dairy is in the Lombardy region of Northern Italy, the same place that boasts beefy Taleggio.

This blue is somewhat unusual because its a very large cheese for a goat's milk cheese. The 25 lb. wheels are aged for 90 days, and the cheese is rindless, and wrapped in foil (like many blues) to hold in its moisture. This cheese is also unusual because goat milk blues are less common.

The texture of this cheese is dense and creamy, almost like fudge. The flavor is very easygoing for a blue cheese, almost like gorgonzola with a goat's milk tang, and can be appealing for all types of cheese lovers.
