This cheese is made at Colston Basset's dairy in Nottinghamshire, a dairy that was started and still remains as a farmer's co-operative solely for the making of Stilton cheese. The Colston Basset dairy prides itself on keeping its manufacturing process as close to the old ways as possible, hand ladling the curds to create the handmade product. There are only 6 dairies licensed by the EU with a protected Designation of Origin to make the true Stilton product, and Colston Basset has been doing it for over 85 years. After the cheese is formed and aged for 4-6 weeks, it is pierced around its circumference to catalyze the growth of the Penicillium Roquefortii (blue mold) which has thus far been dormant, so that the Stilton's blue veins can form throughout the cheese.
