Traditionally referred to as Pecorino di Pienza, this beautiful cheese has taken on the moniker of "Grand Old Man" both because it has been aged for over a year (most pecorino are aged no more than three months) and because it has been made in the same style in the same area for over a millenium. It is remarkably full-flavored, with notes of almonds and olive oil, but not at all sharp. Like most Pecorino, it is best enjoyed as part of a rustic antipasto, perhaps with Fra'Mani Toscano salami, Cerignola olives and a drizzle of honey.
