Cured under the watchful eye of Valencia’s Jamon Maestros, Jamon Serrano is a drier, nuttier alternative to the moist prosciuttos of Parma. Redondo’s Jamon Serrano is cured for a minimum of 18 months in the mountains of northern Spain and is made from the “Landrace” breed of white pig. Serve with a drizzle of lemon infused extra virgin olive oil and Catalan olives.
