Produced on the edge of the Bodensee lake by three master cheese makers, this thermalized cow's milk cheese is firm and powerful. Brine and herb washed and aged for 12 months, it is definitely sharp and occasionally barnyardy, as the raging bull on the label can attest. The creaminess, though, always remains on account of the whole milk and a touch of cream used in the cheese making.
The result is a semi-firm gruyere style that is slightly sharp, intensely creamy and a bit funky up front. The funkiness quickly dissolves into a nice savory mid-palate with a long creamy finish. With its superior meltability, Maxx 365 is a great cheese to cook with, but really shines on a cheese plate when served with fresh red grapes or a crisp apple.
