Named for the town which is the epicenter of the French Loire Valley cheese production, Selles Sur Cher is aged for a minimum of 10 days and can be ripened for up to six weeks. It is immediately recognizable as a white puck covered in ash and mold. Soft with the taste of white wine, thyme and lemon when young; will grow more peppery when aged and can run from dry and flinty to moist and oozy with time. Selles Sur Cher has a fat content of 45 percent and pairs with strawberries, jams and honeys.
