This powerhouse cheese is a mixed milk blue cheese from Leon, Spain. Valdeon is among the stronger blues regularly available in our stores. It has strong flavors of dark berries and red wine with a distinct peppery finish. Valdeon can be recognized by its distinct coating of Sycamore leaves, which separates it from its stronger, northern cousin, known as Cabrales. We think Valdeon tastes best with a drizzle of strong honey or melted over a tender hanger steak.
